Ingredients:

1 pkt of rice paper spring roll wrappers (Asian store)
1 pack of rice vermicelli noodles
One whole chicken cooked (or you can get the cook one at the store)( use any meat as desire)
one lettuce
Fresh mint, cilantro,basil etc
2 cucumber
spring onion (optional)

To make the rice noodles- 4 cup of water, bring to a boil  add rice vermicelli noodles into the boiling  water for 10 to 15 mins, strain and rinse with cold water  for couple time to get the starch out and sit it side.
Wash the lettuce and the cucumber. Chop the lettuce small size(like salad size) and slice the cucumber into stripe. Peel the chicken into little size or stripe size.

Sauce number one Spring Roll sauce:
2tbs of peanut butter
2tbs of hoisin sauce
3tbs of hot water
Juice of 1/2 a lime
The Spring Roll sauce is made by combining the peanut butter, hoisin sauce, hot water and lime juice in a small bowl and whisk until smooth.

Some do not like the  hoisin sauce with the spring roll
Sauce number two Spring Roll sauce:
one part sugar
one part hot water
one part vinegar
one part fish sauce
mix well and then add  
couple hot pepper-(depend on how hot you want)
couple clove garlic chop
roasted peanut (crush or grind)



We will now put our spring roll together by first soaking our rice Spring Roll paper wrappers in some hot water for about 5 seconds only. You do not want the Spring roll wrappers to get too soft as they will tear and be hard to work with. Layer the  chicken side up on Spring roll wrapper for presentation purposes, then lay some lettuce over the chicken, then some strips of cucumber, then some rice noodles and the fresh herbs at the end. We roll up the spring roll up to the half way point, then fold in the sides adding the spring onion at that time and finish rolling tightly and trimming the ends of the spring onions to make our Spring Roll.

The final taste test of this Spring Roll with the chicken, salad, herbs and rice noodle proves this is a healthy and delicious summer snack. It is so fast, versatile and easy (you can have so many different fillings) and a great gluten free simple recipe.
